This is one of my favourite healthy alternatives to fried chicken and I love it!
First you’ll need to know what you will need!
This recipe serves 4
4 Chicken breasts
25g cayenne pepper
15g dried parsley
Firstly cut the breasts in to 4/5 strips and put to one side, now in a bowl mix cornflakes and all the flavourings together then crunch up until the mix takes of a crumby consistency. In a separate bowl crack the two eggs and whisk.
With your chicken strips dunk them into the eggs then coat them in the cornflake mix, continue doing this until all chicken is used.
Finally cook in a 180 degree oven for 15 to 20 minutes and voila – a delicious and healthy meal for the whole family. Serve with a large salad or chips. I recommend serving with a sauce such as mayonnaise because this dish is very temperamental and can dry out If over cooked.
